THE HARVEST TIME AND TECHNIC

Check the producer’s information looking the name and the place where he produces the oils. We can have information on the producing country and on the producing method. Is the oil cold extracted or cold pressed? It’s really important to understand and read the labels information. With more information we might buy better and fresher oils but overall more healthy olive oils!

The mash is put into a centrifuge in a container with small holes, with the ground olives yielding an oil and natural fruit water mixture. This mixture is then put in an additional centrifuge, the decanter, where the oil is separated from the natural fruit water.
