THE NEW OIL SOMMELIER COURSE 2024 – SOUTH AFRICA (FOR YOUR BETTER EXPERIENCE ONLY 20 SEATS ARE AVAILABLE)
At the Masters of Olive Oil Academy, we are in the habit of organising training courses in the most professional way possible. The Olive Oil Sommelier Tasting Course is the start of a complete course, according to Ministerial Decree 7/10/2021, to enrol on the National List of Technicians and Experts of Virgin and Extra Virgin Olive Oils in Italy. This is a course lasting a minimum of 35 hours (normally about 40), authorized by the Region where the course is held. This is the first course directed by two Panel Leaders and held following the criteria established by Reg(EEC) No. 2568 and subsequent amendments and supplements and the MI.P.A.F. decree of 7 October 2021.
OFFICIAL OLIVE OIL COURSE SYLLABUS HIGHLIGHTS?
The Olive Oil Sommelier Course consists of theoretical lessons and practical sessions, and is divided into two steps:
Part 1 First Level – Official Oil Tasting Course – consisting of the Official Course for Aspiring Olive Oil Tasters to obtain the Diploma of Physiological Suitability for Tasting. This is a 5-day full immersion course with final tests with at least four series of tests for each of the attributes indicated in document IOC/T.20/Doc. No 14;
Part 2 Second Level – Official Oil Tasting Course – consisting of 20 certified tasting sessions as prescribed by Italian regulations. For enrollment “in the National List of technicians and experts of virgin and extra virgin olive oils”, in fact, the Ministerial Decree of 7/10/2021, (art.4 paragraph 2 letter b) provides that, in addition to the Certificate of Physiological Suitability, a: “Certificate issued by a Panel Leader as per art.3 paragraph 7, which proves participation, according to the methodology envisaged in Annex 12 of the Regulation, in at least 20 tasting sessions, held on different days, in the 24 months preceding the date of submission of the application, each comprising at least two sessions with 3 organoleptic evaluations”.

The course for aspiring oil tasters will be conducted both in person, utilizing a meeting room and an official panel room, ensuring compliance with IOC and MASAF Ministry guidelines.
This is the first course in which we have brought together two Panel Leaders:
- an International Panel Leader recognised by the I.O.C. nad by MASAF (IT) – Dr. Aldo Mazzini ;
- a licensed Panel Leader in Italy – PHD – Dr. Lorenzo Cecchi.

HOW WILL THE OLIVE OIL-TASTING COURSE TAKE PLACE?
The course for aspiring oil tasters will be conducted both in person, utilizing a meeting room and an official panel room, ensuring compliance with IOC and MASAF Ministry guidelines.
DIDACTIC MATERIAL PROVIDED
All presentations will be accessible online, and after the course, a flash drive containing materials from the lecturers will be distributed. Additionally, we will utilize a dedicated online oil-tasting program developed by the Masters of Olive Oil Academy, aligning with the official IOC program. This platform allows you to practice using the official tasting sheet, enhancing your hands-on experience. Official tasting sheets will also be provided for the manual evaluation of oils.
IMPORTANCE OF SENSORY ANALYSIS AND OIL TASTING
Today, sensory analysis remains the most effective method for highlighting the organoleptic characteristics of virgin olive oils. It’s crucial to recognize that various factors influence the tasting of extra virgin olive oil, including diverse perception thresholds among individuals.
It’s important to note that individual olfactory and gustatory perceptions are complex and can be challenging to translate into an objective scale. Even when expressed by a group of trained panellists with marked sensory capacities, organoleptic evaluation retains a degree of subjectivity.
To address these challenges and ensure as objective and replicable an evaluation as possible, the sensory perception system must be used impartially. The intensity of the objective sensory stimuli perceived forms the basis of unambiguous and standardized sensory evaluation measurements. Scientific and statistical treatments are then applied to the collected data.
SENSORY ANALYSIS OF OLIVE OIL: REGULATORY ORIGINS
The Quantitative Descriptive Analysis (QDA) or Panel Test, developed by the International Olive Council (C.O.I.) and first included in EC Regulation 2568 of 1991, provides a framework for sensory evaluation meeting stringent conditions.
The organoleptic analysis, conducted by recognized and certified Panels or Tasting Committees, relies on several key principles. The challenges of varying perceptual thresholds are mitigated by assembling a group of trained tasters, including a Panel Leader, chosen to recognize positive and negative characteristics. The issue of communication between tasters is addressed by developing an official vocabulary, and an unstructured continuous intensity scale allows for flexible assessment of intensity. (The official tasting sheet for virgin oils consists of a 10 cm horizontal line.)
