THE MASAF OFFICIAL OLIVE OIL TASTER COURSE AND NATIONAL LIST OF EXPERTS IN VIRGIN AND EXTRA VIRGIN OILS

Registration in the  ‘Italian National List of Technicians and Experts of Virgin and Extra Virgin Olive Oils’ is an important step. The application must be made at the Chamber of Commerce office in the province of residence.

What is required to hold the title of Professional Olive Oil Expert? Trainees must consecutive the certificate of physiological suitability for tasting with subsequent attendance and passing of the course consisting of 20 guided tasting sessions over the following 12 months.

The course must be approved by the Region and must last a minimum of 35 classroom hours. Subsequently, a documented activity of at least twenty training tasting sessions also known as guided and certified sensory analysis sessions is required.

>Both steps are selective and each culminates in a final examination. With the final test, the course instructors assess the level of preparation achieved by the trainees.

POSSIBLE PROFESSIONAL OUTLETS FOR OLIVE OIL SOMMELIERS OR OLIVE OIL TASTING EXPERTS

Alongside the figure of the Professional Oil Taster, regulated by the European Community and our legal system, a new profession is also emerging. There are many interesting possible outlets for the profession of Oil Sommelier or Olive Oil Taster.

Becoming an olive oil sommelier means being an expert in oil tasting. An expert by definition must be able to recognise, describe and communicate the virtues, the organoleptic qualities of EVOO. When this competence is complete, he/she will also be able to suggest and indicate combinations on the table between extra virgin olive oil and various types of dishes.

This new professional figure has the task of advising on the possible uses of different olive oils and food pairings.

It is possible to create charts of oils that could be the evolutionary future of the use and pairing of extra virgin olive oil with dishes. This will be a probable near future at least in the medium-high end of the catering sector.

The next step is to take part in a recognised course to obtain the Chief Panel Diploma. The course must always be done following the EEC regulations and the rules dictated by the IOC.
