    WHAT COULD HAPPEN AFTER THE OFFICIAL OLIVE OIL TASTING COURSE?

    Within a few years, after attending the appropriate, more specific courses and having accrued a certain amount of guided tastings, this path can also lead to interesting professional outlets.
    In Italy, a professional taster of a good level and proven experience can earn sums between 2,000 and 4,000 euros per month, as reported in a recent and interesting article in Il Sole 24 Ore.

    With the decree of 18 June 2014, the MIPAAF implemented the standards of the International Olive Council (I.O.C.) and the European Union. The ‘Criteria and procedures for the recognition of tasting panels’ are defined for the correct evaluation and control of the organoleptic characteristics of virgin olive oils under Regulation (EEC) No 2568/91′ subsequently amended and supplemented several times.

    THE MIPAAF OFFICIAL OLIVE OIL TASTER COURSE AND NATIONAL LIST OF EXPERTS IN VIRGIN AND EXTRA VIRGIN OILS

    Registration in the ‘National List of Technicians and Experts of Virgin and Extra Virgin Olive Oils’ is an important step. The application must be made at the Chamber of Commerce office in the province of residence.
    What is required to hold the title of Professional Olive Oil Expert? Trainees must consecutive the certificate of physiological suitability for tasting with subsequent attendance and passing of the course consisting of 20 guided tasting sessions over the following 24 months.
    The course must be approved by the Region and must last a minimum of 35 classroom hours. Subsequently, a documented activity of at least twenty training tasting sessions also known as guided and certified sensory analysis sessions is required.
    Both steps are selective and each culminates in a final examination. With the final test, the course instructors assess the level of preparation achieved by the trainees.
    Passing the exams is a prerequisite for registration in the National List of Extra Virgin and Virgin Olive Oil Technicians and Experts. See Ministry of Agricultural Policies circular no. 5 of 18/06/99.

    POSSIBLE PROFESSIONAL OUTLETS FOR OLIVE OIL SOMMELIERS OR OLIVE OIL TASTING EXPERTS

    Alongside the figure of the Professional Oil Taster, regulated by the European Community and our legal system, a new profession is also emerging. There are many interesting possible outlets for the profession of Oil Sommelier or Olive Oil Taster.
    Becoming an oil sommelier means being an expert in oil tasting. An expert by definition must be able to recognise, describe and communicate the virtues, the organoleptic qualities of EVOO.
